I am half Italian, 1/4 Irish and 1/4 Polish.
In my matches, I have some people who are of Scandinavian ancestry and I also have no known background from that part of the world so I have no idea how to...

On that side of the family, not that far back. I know when both sides of my father's family arrived in the U.S. and it was in the late 1800s and early 1900s. All the family members that I've researched from that period were full Irish or full Polish. Unusual Scandinavian and Africa North result?
My father is 50% Irish and 50% Polish.
His results on Ancestry say that he is:
1% Africa North
59% Europe East
34% Ireland
5% Scandinavia
1% Europe West
I get the Europe East and Ireland result of course and I get the Europe...

If I had one, it would be way back - definitely a very long time ago. The original FTNDA admixture results said that I'm about 70% European (Orcadian, French and Spanish) and 30% Middle Eastern (Jewish, Druze and Adygei).
