Am I correct in assuming a "Y-12" test is a subset of of a "Y-25" which is in turn a subset of a "Y-37" which is a subset of a "Y67"??? In other words, if I've done a "Y-67", I have effectively already done the others?

Yes. Although it is more correct to say Y25 is an extension of Y12, and Y37 extended Y25. Y67 then extended Y37, with Y111 ultimately extending Y67 before FTDNA shifted over to focusing more on Y SNP testing with complimentary STRs collected along the way.
