I manage two profiles, and on both, using two different browsers, I am unable to add more than four Projects - the join/search functionality on the Projects page is just gone - it shows the four that both profiles are members in, but that's it. Anyone else having this problem/know of any solutions? Thanks!

Are you looking at the two profiles through a GAP (admin) account? If so that is likely the problem. Log into the individual kit itself and you should be able to join more projects. There was a change some weeks (or more?) ago that made it so the Join Project link was no longer available for GAP accounts. Perhaps to prevent admins from joining their members into other projects without permission.
