How does one delete credit card information for NON renewal on FTDNA?

FTDNA does not have subscription pricing, because they don't sell a subscription service. MyHeritage and Ancestry, however, do charge subscription prices. Perhaps you were thinking of one of the latter two?
I checked MyHeritage pricing*, and their "PremiumPlus" plan comes close to your $125 price. Ancestry.com doesn't show a $125 price level, although "auto renewal" is something that they do. I'm not sure if MyHeritage uses auto renewal.
23andMe used to have a subscription service, but that was years ago, and is no longer offered.
Whichever service told you they would auto-renew your charges, you should call them back and tell them to cancel your subscription. I believe Ancestry.com will cancel your subscription when your current subscription runs out.

As mentioned above, FTDNA does not have subscription plans.

last resort is to contact credit card company and have them flag and deny any future payments to site/company

$125 was the amount of the Promo Offer to FTDNA members for the MyHeritage Complete Plan. And it said that rate was guaranteed for life.
An offer BY MyHeritage TO FTDNA members. Not something an FTDNA product or service.
MyHeritage has an 800- Customer Service Number, though.
(when one clicked, THEN they showed a little asterisk saying it was only valid for new MyHeritage customers -- AND - Customer Service clearly labelled on the Ad as available 24/7 - but when I called, to see whether I qualified as "new", was told Customer Service was closed then -- but just because it is same amount of money, and I had these quarrels with it, certainly does not mean they are what you spent the money for - just thought I would ask if maybe this was it ...
